Laney DeJonge is co-owner of Rojo, which serves both Latin and American cuisine. When she craves comfort food, she gravitates to warm enchiladas, spaghetti and soups.
“With colder days, I love to make a crock pot of chili. It is easy and the smell of it cooking all day makes the house cozy,” says DeJonge. “I modified a Paula Deen recipe for taco soup. It is a twist on regular chili, adding the ingredients of ranch dressing and black olives. The black olives are optional.”
Taco soup
2 pounds ground beef or ground turkey
2 cups diced onions
2 (151/2-oz.) cans pinto beans
1 (151/2-oz.) can pink kidney beans
1 (151/4-oz.) can whole kernel corn, drained
1 (141/2-oz.) can whole tomatoes
1 (141/2-oz.) can diced tomatoes
2 (10-oz.) cans tomatoes with chiles
2 (41/2-oz.) cans diced green chiles
1 (4.6-oz.) can black olives, drained and sliced
1 (11/4-oz.) package taco seasoning mix
1 (1-oz.) package ranch salad dressing mix
Corn chips, for serving
Sour cream, for garnish
Grated cheese, for garnish
Chopped green onions, for garnish
Pickled jalapenos, for garnish
- Sauté the onions, remove and put in crock pot.
- Brown the ground beef or turkey in a large skillet; drain the excess fat and transfer to crock pot.
- Add the beans, corn, tomatoes (squeezing the whole tomatoes into the pot), green chiles, black olives, taco seasoning and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove.
- To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

One of my favorite shoots so far has been what I call the Big BAM Wedding. Several of my associates and a couple models gathered for a day at the Birmingham Botanical Gardens and we shot some faux wedding photos. The above photo is of Leslie running away from her wedding (or running to her wedding, late) and is one of my better sellers from that shoot. Most of that day was shot natural light, though I did use some umbrella with flash in the bamboo forest, where is where I got shots like this (with Arlos)….

I LOVE this one with Arlos and the lightsaber. Every time I see it I instantly think of a Star Wars video game cover.
